How often should a commercial ice machine be cleaned?

Manufacturers generally call for a minimum of two deep cleanings per year. High-volume kitchens, bars with open bins and locations on hard water usually need three or four to stay ahead of scale and biofilm.

Can my staff just do it?

Staff wipe-downs help, but a compliant cleaning means dismantling the evaporator and water path with the right chemistry. Doing it wrong can void warranty coverage and damage plated evaporators.

Set the schedule
Two, three or four visits a year depending on volume, water chemistry and how exposed the bin is. High-volume bars and hospitals get more.

Strip and descale
The unit is broken down, scale is removed from the evaporator and water path with NSF-listed chemistry, and every removable part is cleaned separately.

Sanitize the whole path
Bin, dispenser, chutes, drop tubes and lines — not only the parts you can see. Biofilm hides downstream of the evaporator.

Document it
Every visit produces a dated, per-asset record you can hand to an inspector or corporate QA without hunting for it.
